This week, we’ve been using the grill for foods we don’t normally cook outside!
Hopefully you already read the posts for grilled Reuben sandwiches and smoky fire-roasted salsa.. so now for dessert!
If you haven’t tried grilled peaches (pineapple is my other favorite), please promise me you will before the summer is over.
They are so delicious. Here’s how I did these ones..
What you’ll need…
Ripe, but still somewhat firm, peaches. Preferably a free-stone instead of a cling variety, meaning that you can pull them easily from the pit.
Honey
fresh lime juice
1 cup whipping cream
2 Tablespoons sugar
1 teaspoon cinnamon
splash of vanilla extract
What you’ll do…
Cut the peaches in half and remove the pit. (If you couldn’t find a free-stone variety, you’ll have to get creative slicing your peaches, or you could use sliced pineapple instead with these exact same directions.) I like to leave the skin on, it helps hold the fruit together.
Brush all sides of the peach lightly with honey.
Place the halved peaches directly onto a clean grill, cooking on each side for just a couple of minutes. Enough time for the outside of the fruit to caramelize. Do this when you’re ready to eat, because you want them warm!
To make the whipped cream: Using a stand mixer with a whisk attachment or a hand mixer, whip the whipping cream for several minutes until it forms soft peaks. When it’s close to finished whipping, add in the sugar, cinnamon, and splash of vanilla extract. That’s it!
When you’re ready to serve, squeeze just a little lime juice right on the peaches (you don’t have to, but I love it..), and top with your cinnamon whipped cream. Make it look super fancy and legit with a little mint leaf. Voila! You cooked a delicious dessert without turning on the stove! High five!
