When it comes to the first meal of the day, I’m the kind of person that has a snack before going out to breakfast in case there’s a long wait. People who just have coffee for breakfast? Umm, no. Being super hungry is usually what gets me out of bed in the morning (either that or a child), and it is SO nice to have something substantial to eat that’s already prepared. This is especially true on days I go to work, and these breakfast burritos are so easy to take on the go. They’re delicious, and this recipe takes less than an hour of prep to make 10 burritos!
Ingredients:
4-5 small red potatoes
12 eggs
2 tablespoons butter
1 pound ground sausage
1 cup shredded cheddar cheese
10 large flour tortillas
Olive oil
Paprika
Salt & pepper
Preheat oven to 400 degrees. Chop potatoes into small, bite sized pieces and place on a foil lined baking sheet. Drizzle with olive oil and season with salt, pepper, and paprika, tossing to coat. Spread them out evenly and bake for 20 minutes or until they are fork tender.
While the potatoes are cooking, brown the sausage on the stove top over medium-high heat until it’s completely cooked through. Whisk the eggs in a large bowl and season with 1/2 teaspoon of salt and 1/2 teaspoon of pepper (or your taste preference.) Melt the butter in another skillet on low-medium heat. Add in the eggs and stir frequently until they’re cooked completely. (You could cook the eggs in the same skillet as the sausage once it’s finished browning, but I prefer to cook the eggs separately and add them once they’re fully cooked. Otherwise I think the eggs become kind of lost in this recipe.)
When the potatoes, sausage, and eggs are finished cooking, stir them together and add the shredded cheddar.
Roll about 1 cup of the mixture tightly into each tortilla, making sure to fold in the ends. Then tightly wrap each burrito individually in aluminum foil and place burritos in a large ziplock bag to freeze.
Heating instructions from frozen:
Microwave– remove burrito from foil and place on a microwave safe plate. Heat on high, turning burrito over every 30 seconds, for 1.5-2 minutes, or until heated through.
Conventional oven- leave the burrito in tin foil and heat for 30 min in a 350 degree oven, until heated through.
Make sure to have your favorite hot sauce on hand, or try adding a can of diced green chilies to the mix.
PS- these are the BEST to take camping!
